Location : At the foot of the hillsides of the Valley with a southern exposure

Soil : Granite soil rich in clay

Age of the vines : from 15 to 20 years

Grape varieties : 90 % Pinot Auxerrois - 10 % Pinot Blanc

Production : 11 800 bottles (980 cases)

Vinification :
- no malolactic fermentation to preserve the freshness of the natural acidity and the aromatic finesse
- Ageing on laths for 24 months
- A low dosage of liqueur added after disgorging at 5 g of sugars/bottle

Main analytic characteristics :
- alcohol = 12°
- pH = 3.43

Tasting notes :
- A crystal-clear colour with pale gold reflections
- A well developed and complex nose, first presenting fruits touch (wild strawberries, quince, yellow plums, …) then developing some more creamy and toasty undertones.
- A fine and tender effervescence on the palate, followed by a blossoming of aroma.
Firm without being sharp, it is a very elegant Crémant which will make your aperitifs and special moments sparkle . 

Associations :
An ideal wine for receptions and parties. It also goes very well with warm or cold seafood, fish starters and with white meat.

Ageing : between 3 and 5 years
